Chevys Fresh Mex is a chain of Mexican-style casual dining restaurants located in the United States. The chain was founded in 1981 by Warren Simmon, Sr. and Warren "Scooter" Simmon, Jr. in Alameda, California.




Mexican Caesar Salad

Chevy's Fresh Mex Restaurant Recipe

Serves 4

1 large head romaine lettuce
3 cups chicken fajita meat, cut into 1 inch strips
Tortilla Strips    (recipe below)
Caesar Dressing  (recipe below)
1 cup julienned roasted red peppers, stemmed, peeled, and seeded
4 ounces queso fresco
4 cilantro sprigs

Trim the lettuce leaves. Cut into 1 inch pieces, and then wash and dry thoroughly. In a large mixing bowl, toss with the chicken, tortilla strips, and dressing. Divide among 4 serving bowls. Top with the bell peppers, cheese and cilantro.

Tortilla Strips:    
Cut 6 (6 inch) corn tortillas into 1/8 inch strips. Heat canola oil in a heavy skillet to 350 degrees. Drop a handful of strips in to hot oil and dry for 45 seconds or until the strips are crisp and deep gold in color. Move them around with tongs to prevent them from sticking together. Remove with a wire mesh strainer and transfer to a paper towel lined baking sheet to drain. Salt generously. Repeat until all the strips are fried.

Caesar Dressing:
1/2 cup mayonnaise
1/2 teaspoon chopped garlic
1/4 cup chopped cilantro
1/4 cup chopped green onion
1/2 teaspoon salt
1 teaspoon black pepper
1/4 cup freshly squeezed lime juice
3 anchovy fillets
1 tablespoon Dijon mustard
1/4 cup queso fresco

Combine 2 tablespoons of the mayonnaise and the remaining ingredients in a blender or food processor. Blend until mixed. Transfer to a mixing bowl. Whisk in the remaining mayonnaise and blend well. Cover and refrigerate until ready to use.
