Chevy's Fresh Mex Fajita Nachos
1 lb flank steak
1 bag tortilla chips (or individual flats recipe below)
2 cups shredded Mexican cheese
1 envelope fajita seasoning mix
pico de gallo
If you have a grill, grill flank steak seasoned with fajita seasoning until done. If not, you can also cook indoors in a well-greased skillet. Arrange tortilla chips/flats on a baking sheet with aluminum foil covering it. A pizza pan works particularly well for this. Top the chips with the cooked flank steak, topped with cheese and any other toppings you desire, such as peppers or onions. You can also add a bit of fajita seasoning to the cheese to give it a little zest. Place in 350 Degree oven for 20-30 minutes, depending on how long it takes to melt the cheese. Garnish with sour cream, guacamole, lettuce, tomatoes, or any other desired garnish.
Chevy's calls these a feat of nacho engineering because the make individual tortilla chips topped with your choice of chicken & jack cheese, steak & cheddar cheese, or both with refried beans. Feel free to experiment with this recipe to customize it to your tastes.
Individual Tortilla Flats
Twelve 6-inch corn tortillas (preferably white)
1 tablespoon vegetable oil
Preheat the oven to 350 degrees F. Brush both sides of the tortillas with the oil. Stack the tortillas and cut the pile into quarters to make chips. Spread the chips out in a single layer on two large baking sheets and season with salt. Bake until golden brown and crisp, rotating the baking sheets once, about 12 to 15 minutes. Serve.
