Chevys Fresh Mex is a chain of Mexican-style casual dining restaurants located in the United States. The chain was founded in 1981 by Warren Simmon, Sr. and Warren "Scooter" Simmon, Jr. in Alameda, California.

Copycat Recipe

Serves 6-8

1 box Velveeta, (16 ounce)
3/4 cup whole milk
1 green Anaheim pepper, seeded and diced(about 1/2 cup)
1/4 cup diced white onion
1 jalapeno pepper, seeded and diced
2 teaspoons minced cilantro
juice of 1 lime
1/4 teaspoon dried oregano
1/4 teaspoon freshly ground black pepper
1 pinch salt
1 pinch dried thyme
2 medium tomatoes, seeded and diced(about 2/3 cup)

1/4 cup ranchero cheese, crumbled

Combine Velveeta and milk in a medium saucepan over medium heat. Stir often as cheese melts. Be careful not to burn it.When cheese is melted add the remaining ingredients, except the tomatoes. Continue to cook over medium heat for 7 minutes, stirring often to prevent burning. Stir in tomatoes and remove queso from heat. Pour into a serving dish, top with crumbled ranchero cheese and serve with tortilla chips.

Baked Tortilla Chips

No-Stick Cooking Spray
8 (6-inch) corn tortillas
Salt, to taste

Heat oven to 350 degrees. Spray a baking sheet and both sides of the corn tortillas with no stick cooking spray. Slice each tortilla into 8 wedges; sprinkle lightly with salt. Place on baking sheet; bake for 12-15 minutes or until crisp and lightly browned.
